This is a batch pre-mixed which is loaded with the essence associated with festive period, making it ideal for your celebration. Reserve the remaining syrup to use in morning drinks, puddings, or to mix additional servings of bikinis.
Bikini Recipe
Makes enough for 10 people
Ingredients for the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Place all the ingredients inside a pan, heat until it reaches a gentle boil, mixing to dissolve. Next, remove from the burner and let it to cool down completely. Pour into an clean bottle, close it keeping it chilled, it can be stored for up to one month.
Preparing the Batch Mix: Pour every spirits and syrup into one large bottle, leave to sit for an hour, then filter it best through a fine cloth, to ensure it's completely strained.
When ready to serve: Measure 85ml from the batch mix into a cocktail shaker containing ice, and stir gently for a minute to chill. Pour into a frosted cocktail glass or equivalent, top with the cranberries adding the final touch by giving it a quick spritz with the mandarin essence above the glass.
